Mug Cheesecake

Ingredients

  • 2 tablespoons confectioners sugar
  • 2 tablespoons fat free sour cream
  • 3 tablespoons low fat cream cheese
  • 1/8 teaspoon lemon juice
  • 1/4 teaspoon vanilla extract
  • 1/2 egg, beaten fluffy (egg substitute works too)
  • Mix-in of your choice (if desired)
  • 1 vanilla wafer

Directions

  1.   In a small bowl mix together sugar, sour cream, cream cheese, lemon juice and egg until well combined.
  2.   Fold in your favorite mix-in. (If you want a plain cheesecake, just leave this step out.)
  3.   Microwave on high for 1 minute.
  4.   Open microwave door for 20 seconds, close and microwave again for 45 seconds (if you use a mix-in you might need additional 20 seconds).
  5. 5.   Take out of microwave, let cool for 10 minutes and then transfer to the refrigerator for about 2 hours.
  6.  Serve with a crushed vanilla wafer on top (or if you take it out of the cup put crushed vanilla wafer on the plate and place cake on top).

No-Bake Peanut Butter Chocolate Bars

Ingredients

  • 2 cups old fashioned rolled oats
  • 1/2 cup ground flax seed
  • 1/3 cup shredded unsweetened coconut flakes
  • 1/2 cup chopped pecans
  • 3/4 cup peanut butter
  • 1/2 cup maple syrup
  • 1/2 cup chopped dark chocolate
  • 1 1/2 tablespoons chia seeds
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of salt

Directions

  1. In a large bowl add oats, ground flaxseed, unsweetened coconut, chia seeds, salt and ground cinnamon.
  2. Bring a small saucepan to medium heat, add peanut butter and maple syrup, melt peanut butter and continue to stir until liquidy.
  3. Pour peanut butter mixture over oats and stir to combine. Let cool for 2-3 minutes.
  4. Add in dark chocolate chunks. Stir together.
  5. Place oat mixture in an 8×8 pan and press the mixture down until flat.
  6. Cover and place in refrigerator for 30 minutes.
  7. Devour!

Skinny Brownie in a Mug

Ingredients

  • 2 tablespoons whole wheat flour
  • 2 tablespoons granulated sugar
  • 1 1/2 tablespoons unsweetened cocoa powder
  • A pinch of baking powder
  • 1/4 teaspoon vanilla
  • 3 tablespoons plain yogurt

Directions

  1. In a microwave safe bowl or coffee mug, combine the flour, sugar, cocoa and baking powder. Add in the yogurt and vanilla and stir until smooth.
  2. Microwave for about 1 minute.
  3. Depending on how gooey you like your brownie, you could microwave it for more or less since there’s no egg in it.

Blueberry Muffin with Streusel Topping Mug Cake

Ingredients

  • Muffin
  • 1/4 cup flour
  • 2 tablespoons granulated sugar
  • 1/8 teaspoon baking powder
  • 1/16 teaspoon baking soda
  • 3 tablespoons fat free milk
  • 1 tablespoon vegetable oil
  • 7 fresh blueberries
  • Streusel topping
  • 1 tablespoon cold butter, chopped into tiny pieces
  • 1 1/2 tablespoons flour
  • 2 1/2 tablespoons brown sugar
  • 1/8 teaspoon cinnamon

Directions

  1. Mix everything listed in muffin ingredients except blueberries in a microwave safe mug with a small whisk.
  2. Drop blueberries in, spreading them out.
  3. In a small bowl, mix streusel ingredients, until butter pieces are completely coated in the flour, sugar and cinnamon.
  4. Sprinkle small crumbles of streusel on top of muffin batter, spreading out evenly across surface.
  5. Cook in microwave for about 1 minute. Let cool for a few minutes before eating.

Individual Microwave Cherry Crisp

Ingredients

  • 12 cherries pitted
  • 1 1/2 tablespoons coconut sugar
  • 1/2 tablespoon wheat flour (can substitute gluten-free flour)
  • 2 tablespoons oats (can substitute gluten-free oats)
  • 1 tablespoon vegan buttery spread

Directions

  1. Place the pitted cherries in a ramekin.
  2. In a separate small bowl, combine the coconut sugar, oats and flour.
  3. Place the topping on top of the cherries. Cover with waxed paper.
  4. Microwave for 70 seconds at 70% power.
  5. Let sit for at least 5 minutes, then enjoy!
